Cookbooks On Sale Now Featuring GSC First Lady's Recipe

You can learn how to prepare one of GSC First Lady’s favorite recipes and help a good cause at the same time! Betsy Barr (pictured) says she often prepares “Marinated Chuck Roast” for her and Glenville State College President Peter Barr as well as their guests. The recipe is one of many included in a community cookbook now on sale to benefit the Gilmer County Historical Society.

GSC is among the community sponsors of the cookbook, which is a fundraiser for the historical society. The books arrived in Glenville on Monday, May 7th, and are on sale at several area locations including the GSC Bookstore, the Conrad Motel, the Sand Fork Post Office, Gilco Pharmacy, and the GC Historical Society office at 302 East Main Street in Glenville. Along with the Barrs’ Marinated Chuck Roast recipe, other GSC employees and many local residents submitted their favorite dishes for the publication.

Cookbook coordinator Thelma Norman, a Gilmer County Historical Society member, says the books are $12.00 each. A $4.95 shipping and handling charge will also be added for those needing the books mailed to them. If you’d like to prepare Mrs. Barrs’ delicious dish, the recipe for the Barrs' Marinated Chuck Roast is: 3 lbs. chuck or London Broil, 1 tsp. accent (optional), 2 tbsp. soy sauce, 2 tbsp. oil, 1 tbsp. worcestershire, 1/3 cup wine vinegar, 1/4 cup catsup, 1 tsp. dry mustard, 1 tsp. salt, 1/4 tsp. pepper, and 1/4 tsp. garlic salt. Mix ingredients and pour over meat. Marinate overnight. Broil 45 minutes turning once. The recipe can be doubled and also used with chicken. Save marinade, heat, and use for a side. Enjoy!
